Okra with creole dressing

The Okra salad is quite famous in Guadeloupe Archipelago when it comes to enjoy Okra.

Here is a simple recipe that will definitely delight your taste buds. The originality of this recipe is the creole dressing which is serves with the salad.

Ingredients for 4 people:

– 400 g of Okras

– A bunch of spring onions

– Fresh or dried thyme

– Fresh or dried parsley

– 2 cloves of garlic

– 1 hot chilli pepper (optional)

– 6 tablespoons of vegetal oil (Depending on your preference, I like it with olive oil)

– 2 limes

– Salt

– Black pepper


  • Wash the okras and take of the peduncles and ends
  • Put them in a sauce pan with water, half of spring onions, thyme and a pinch of salt in a medium heat during 10 minutes (Be careful because when they are overcooked, they tend to be sticky
  • Drain them, put them in a big plate and set aside
  • In a bowl, mix together the oil, the juice of the limes, chopped garlic, the other half of the spring onions and the hot chilli pepper finely diced. Put some salt, black pepper, whisk with a fork and finally add 3 tablespoons of hot water
  • Pour the creole sauce into the okras and serve like this
