Breadfruit gratin (Gratin de fruit à pain)

After the introduction of the breadfruit, I thought that will be interesting to let you know how you can enjoy this fruit considered as a vegetable in a tasty recipe. Here is the breadfruit gratin recipe:

Ingredients for 4-6 people:

– 1 large green and firm breadfruit

Bechamel sauce:

– 300 ml of milk

– 1 tea spoon of salt

– 50 grams of butter

– 1 large onion finely chopped

– 1 tea spoon of mixed spice

– 1 garlic clove finely chopped

– Parsley

– 2 cups of parmesan cheese grated

– Some black pepper

– Some nutmeg (optional)


  • Peel breadfruit and remove core. Cut in medium pieces and place to boil in a large pot with enough water to cover for about 10 to 15 minutes. Once thoroughly cooked, remove breadfruit pieces from the pot and put them in a large bowl and mash them with a potato masher or a large fork. Set aside

Do not blend the breadfruit when cooked, otherwise the mixture will be sticky and difficult to handle

  • In a saucepan, melt the butter. Add the onion and the parsley and cook for about 2 minutes while stirring
  • Add garlic, black pepper, mixed spices, salt, milk and nutmeg. Add breadfruit and parmesan cheese
  • Mix everything thoroughly and let cook for about 2 to 3 minutes while stirring
  • Add mixture in prepared baking dish and bake for 30 minutes or until gold to 180°C

You can have it with any type of meat and add some green salad if you are fancy
