Guava pastries

In Guadeloupe, there is a famous recipe composed of guava jam called guava pastries. Let me introduce to you the recipe which is very simple.

Ingredients for 9 pastries:


  • 250g of flour
  • 125g of butter
  • 1 tablespoon of sugar
  • 1 egg yolk
  • 1 pint of salt
  • 2 tablespoons of water

Guava jam


  • Mix in large bowl the flour, the butter, the sugar and the pint of salt
  • Sandblast everything with the fingertips
  • Keep mixing and add the water
  • Make sure the pastry is compacted
  • Reserve in the fridge for 30 minutes
  • On a lightly floured surface, gently stretch the pastry with a rolling pin
  • Cut the pastry sheet into 9 equal squares
  • Use a teaspoon and place the guava jam in the centre of each square
  • Fold over to make a triangle. Crimp the edges
  • Brush each triangle with the egg folk
  • Bake for about 15-20 minutes or until golden brown at 375°

You can use many other fillings with other tropical fruits jams such as banana, coconut, mango or passion fruit. Generally we eat this as a snack but you can also have it as a dessert.
